渔夫说的“味重的菜”，确切地说，应该是油重的荤菜。慈姑有一点淡淡的清苦，如果跟荤菜一起炖，荤菜就不会显得太油腻，同时慈姑也不会尝起来苦，而是有一种很滋润的甘香。

慈姑含淀粉高，也就是比较“面”。我印象里有这样一桩轶事：汪曾祺原来是不喜欢吃慈姑的，有一次在老师沈从文家里吃到师母炒的一盘慈姑，沈从文当时说，这个好、比土豆格高。离开南方久之，汪甚至有一次怀念慈姑，由此写了一篇短文。

慈姑为什么比土豆“格”高，这个就不要问我了……我对土豆是蛮同情的。
